A classic combination: caviar and blini. Our recipe is for a simple blini with just three ingredients that can be whipped up in no time and enjoyed right away. Once you have your blini, preparation is simple: a spoonful of caviar and enjoy! NOTE: you can replace with gluten- and dairy-free alternatives in same amounts.
Makes 15 blini.
1/2 cup of buckwheat flour (or you can use equal parts all-purpose and buckwheat)
1/2 cup of slightly warm whole milk
4 tablespoons of butter (separated)
Combine flour and milk in a medium size mixing bowl.
Melt 2 tablespoons butter and combine with other ingredients in mixing bowl. Gently mix.
Heat up skillet and coat surface with remaining butter. In batches, add batter in 1 tablespoon portions. Do not overcrowd pan. Flip when bubbles appear and cook for about 1 minute more until browned on both sides. Keep in a low oven and until ready to serve.
